I love making this recipe for people that don’t believe that you can have a good hearty chili without meat. Lies. All lies.
This is the perfect dish for introducing soy meats into a carnivore’s diet. I guarantee you that they will not be able to tell the difference in this recipe — but their heart sure will. No artery clogging cholesterol here.
*And don’t tell them until after they’ve eaten it. Seriously.
Ingredients:
1 tbsp olive oil
1 package of Trader Joe’s Soy Choirzo
1 yellow onion
1 can of kidney beans -or- black beans
2 cans of diced tomatoes
1 can of tomato sauce
1 tbsp cumin
1 tbsp chili powder
1 tbsp paprika
1/4 tsp salt
1/4 tsp pepper
1/2 tsp sugar
A couple of dashes of hot sauce
Saute the diced onion in the olive oil for five minutes, until it starts carmelizing. Cut open the Trader Joe’s Soy Chorizo, remove “meat” from packaging and add to the onions. Saute for another five minutes.
Add the beans tomatoes, tomato sauce. Simmer for 15 minutes, and then add the spices. Simmer for another 15 minutes, and serve with your favorite sides.
Easy, right? Totally. Meat will not be missed — I promise.
Tip: Don’t remove the beans from their starch. Keeping the starch in the pot will help the chili to thicken faster.
