I just made a snack, you should make it too: Caramel Popcorn

I hit the motherload today. My inspiration? The desire for a snack that I wouldn’t feel guilty about afterwards.

Let’s rephrase: A guilty snack that I wouldn’t feel guilty about afterwards.  Specifically, caramel popcorn.

Ingredients:
1 bag of microwave popcorn (the plainest, low-fattiest you can find)
1/2 stick of butter
1 cup brown sugar
2 tbsps milk
1/2 tsp vanilla
1/4 tsp baking soda

Start out by popping the popcorn and setting a side. Melt butter in a large pan over low heat, then turning off. Add the: brown sugar, milk, and vanilla, and mix well. Turn heat back on and cook (while stirring with a spoon coated with cooking spray), until boiling. Let the caramel boil for a minute (NO LESS). It’s going to need time to liquify.

Once the caramel looks fluffy and hot, remove pan from heat and add the baking soda. The color of the caramel should lighten a shade. Continue to stir while cooling, keeping the caramel smooth and creamy (about 3 minutes).

Add popcorn into a large bowl coated with cooking spray. Pour caramel into the bowl and mix well. Popcorn will look wet (and it should). Empty the popcorn onto a baking sheet lined with wax paper and let cool.

Then eat the hell out of it. It’s too good.
