Broccoli Casserole ala 2011

Totally obsessed with casseroles right now, and I’m going to ride this wave until it stops.  You know why? Cause casseroles are AWESOME! You want to know why they’re awesome? Because they’re cheap, healthy (when I make them), and make plenty of leftovers for lunch the next day.

This is a recipe I whipped together last night with the intention of using up a bag of frozen broccoli. Had to make room for more ice cream in the freezer after all.

1 tbsp butter
2 medium sized yellow onions, diced
1 large bag of frozen broccoli
1 cup of cheese (Gruyere, Comte, and Monterey Jack are some of my favorites), grated
½ cup of low fat mayonnaise
½ cup of fat free sour cream
1 sleeve of whole wheat saltines, crushed
Salt and pepper to taste

Preheat the oven to 350 degrees. In a large saucepan, melt the butter and brown the onions until translucent. Add the broccoli and sauté until heated through. Remove from heat, and add the grated cheese, mayonnaise, sour cream, and whole wheat saltines.  Mix well and transport into an oven safe casserole dish.

Bake for 30 minutes, and for the love of everything good, serve it with some homemade mashed potatoes.

Tip: Want to get fancy? Reserve some of the cheese and saltines, and sprinkle on the top of the casserole to make it prettier. I don’t care if it’s pretty — I’m still going to eat it.
