Sunday Brunch: Baked Eggs Florentine

I don’t know — today was the day, I guess. I’ve been holding onto this recipe for about 6 years now, with no immediate intent on making it. Well, I just ate the hell out of it while watching Season II of Party Down. Perfect combination for a perfect Sunday brunch !

(Amounts depend on how many servings you choose to make):
Bread slices (white, or french work best)
Thawed frozen spinach, or fresh spinach sauteed and wilted down
Bag of mache
Cherry Tomatoes
Lemon Juice
Olive Oil
Salt & Pepper

Preheat oven to 350 degrees. Coat a muffin pan with non-stick spray. Butter pieces of bread and place into tin slots. Add spinach, egg, salt and pepper. Bake for 20 minutes.

Serve with mache and cherry tomato salad coated with lemon juice and olive oil.
