If You Like It, Then You Should Have Put An Egg On It…

So, my new thing? Putting eggs on everything. Sandwiches, salads, tortillas, my son’s head…

… I said everything. But my most favorite thing to put eggs on has been, pizza. Pick whatever toppings you want, I guarantee you it’s going to taste better if you crack an egg over it before putting it into the oven.

As a matter of fact, I challenge you to go into your kitchen, pull out  couple of random toppings, whatever cheese you can find, make a pizza out of it, and crack an egg on it. Then, I challenge you to try and convince me that (no matter what toppings are under that egg), it’s not the most delicious thing you’ve ever eaten.

In testing this theory out multiple times myself, I’ve found the following to be my favorite combinations:

BBQ/Kitchen Sink Pizza:
Sauteed mushrooms
Sauteed onions
Bottle BBQ sauce (You know, that one that has been sitting on your refrigerator door for the past 4 months)
Leftover shredded sharp cheddar from Taco Night

Top (all of the above) with an egg. Bake. And eat.

Veggie Pizza:
2 cups mixed leftover veggies (I use broccoli, squash, onions, and corn)
Leftover marinara
Leftover comte cheese, mixed with gouda

Top (all of the above) with an egg. Bake. And eat.

See the trend here? It never ends.

As for the pizza dough? I buy it pre-made from an awesome local store called Russo’s in Waltham, MA. It’s .99 cents, and available in whole wheat!  So great, and easy.

I do have a great pizza dough tip to share though: par bake your crust. It makes the pizza much more crispy. I do this by heating two gas burners (med/high) and placing the baking sheet on top of them. I then add olive oil to the baking sheet and putting the pizza dough on it. While the dough is cooking, I add the toppings, and then place in the oven at 425 degrees for 15 minutes. Comes out perfect, every time!
